Gluten free cookies

After sharing my three ingredient banana recipe, I wanted to post more to show just how easy it is to make gluten free snacks. Being gluten intolerant myself, the main struggle is finding a way to make delicious snacks without spending a fortune on free from. So here’s another easy three ingredient recipe.

For six servings you will need…

1 egg

260g peanut butter (alternatively you could use almond butter)

200g caster sugar

1. Preheat the oven to 180 C/gas mark 4.

2. Mix the peanut butter, sugar and egg into a bowl until smooth. 

3. Line the baking tray with baking parchment and drop spoonfuls of the cookie dough onto the prepared baking tray.

4. Bake the cookies in the preheated oven for six to eight minutes until they are soft and barely brown.
